    There's a load of wank about Guinness being better in Ireland but since it's now all brewed in the same place and transported in pressurised kegs it's just the pour that makes the difference. They should use a Guinness branded glass, pour at an angle up to the top of the harp, settle until it's actually fucking settled, not just wait a few seconds, then pus the tap handle back, hold the glass vertical and fill until the head goes above the rim of the glass. If the barman/woman does it any different, ask for another pint.
