Built my Peugeot with a very old 3-sp Sturmey Archer AW hub which I've had for years (they can be found very cheap on ebay or bike recycle places), and another £50 for LBS to build Mavic Open Sport with DT spokes. So mine was £50 + another £10 or so for a new indicator chain, sprocket and cable clamp.
For a shifter I just use a normal friction downtube shifter, I find them more reliable and easier to use than the nasty SA trigger-shifters. I imagine that an old non-indexed gripshifter from a cheap mountain bike would work too, if you've got one lying around.
Like ed says though, don't shift when pedalling or you'll pull the cable clamp apart (done it twice now...)
