Pretty much anything you change on there is going to compromise performance, probably best to accept that your bike is for riding, not weighing.
Having said that,
Tektro brakes for £110 will drop ~70g and work as well as Ultegra
Pick a stem from Ritchey WCS, Pro Vibe 7S (my favourite), Syntace F119 to drop ca. 50g
CS-7900 12-27 for £122.50 here, weight saving is significant with those big cogs at the bottom end.
Less than 200g saved for your £300 outlay, but without compromising on performance and reliability.
