I reckon it's going to be bars, saddle and brakes that get it under 7.5kg.
Looks really nice. I'm not sure its worth upgrading any of it.
Gossamer bars are fairly light TBH, if you spend quite a lot on some carbon bars you may save 90g.
Ultegra brakes are'nt exactly overweight, but you can definitly save some here. I'm looking to get some Negative GSL's. I just need them to come up cheapish on EBay. Would save you 125g, and work really well (esp for ww calipers).
The arione is'nt light, but if its comfy, its difficult to recommend replacing it. Proper weight weenie saddles need to fit exactly to work, as they have little padding to smooth over any miss matchings. I'm going with a 135g ti railed SLR. 90g saved, but if it dosent fit......
Getting some Nokon brake and gear cables could save over 100g.
Could get a Heylight seatpost for about 95 Euro and save around 100g or more.
Swapping out the stem for a Ritchey WCS 4 axis could save 50g.
If you did all that you'd save 550g, and that doesnt include the lightening of your wallet. Some are worth it, but most are for those desperate to squeese a few extra grams off their bike, regardless of cost. Like I said, your bike looks great already (IMHO) on paper.
