Is it just me, or do all these shoes look goofier and uglier the more expensive/high quality/bespoke they get?
The shapes of OTP low-mid price shoes look way better, more stylish, less bulky and more refined.
It's all about the Goodyear Welt as opposed to stuck-on soles. Stuck on shoes have a short lifespan and are effectively dead when the sole is worn out. GYW soles can have a completely new sole re-stitched on for a small outlay, they come back looking new, you can do this up to three times. I know John Lobb in Northampton charge around £80 which isn't bad considering the amount of work involved. I have a few pairs of both types, GYW have their place, I see your point - GYW soles will always be thicker than stuck on.
