Secret's out...
Balance, release, photograph (whilst holder keeps out of the frame), and catch the bike before it topples over. After a bit of practice you can easily get the bike to balance for a good 2 secs or so.
Or not in the original picture in question you can see the use of the photoshop clone stamp
