Line what ever you are cooking it in butter (unsalted)
Cover the bottom in sliced banana
Sprinkle said banana's in cinnamon (I used a slightly heaped tea spoons worth), I also drizzled a bit of honey over for extra flavour.
then add the batter and cook for 30mins at 250c and dont open the oven though as it wont rise properly
The batter is very easy, basically yorkshire pudding mix but with sugar.
285ml/ 1/2pt of milk
115g/4oz of flour
3 medium eggs
115g/4oz sugar
I actually put less sugar than this in because the banana's very ripe and sweet, but traditionally you make clafoutis with whole black cherries. So if sometimes I make the batter a bit sweeter to combat overly sharp cherries.
