Regarding stripping the saddle, why do you want to? If it's fine as is there's no point. I find stripped ones more forgiving on road bikes as opposed to fixed wheel. The only benefit I see in them is the smoothness, doesn't grip to your butt in the wrong place, and doesn't get wet and gross when it rains.
