HeyWire - I'm using it right now to text for free from abroad! Brilliant app - saved myself quite few quid already.
Flipboard - change the way I use the social networks. Get it if you're not a school kid and need more then few lolz with bredrens.

Sorted - good for simple to do lists.
Blue Block and Hero HD - my fave games on iPad at the moment. Super Lazer on IPhone, but also can do stretched.
Drawing Pad - for my daughter to occupy her during the flights.
Did I mention Zumo Cast to play my song/videos while 1000 miles away from my deskto? Bloody handy stuff.
Air Display - to move Photoshop palettes and menus on my IPad while using MacBook to save the space. In theory I can use stylus to retouch faces while benefiting from the iPad's touchscreen, but it's bit slow and pixelated when you move the photo around the screen.
