    just troughed another fabulous parasol omlette for tea.

    been talking to Polish house mates about the shrooms, apparently the season over there is going OFF! more than they can eat, as its really popular the markets have a kilo of chanterelles for 10 Zlotys, (about £2.50) sounds ace,

    whilst Im here mushroom lovers I got a couple of receeps for yas,
    sorry if theres any OCDs about, I dont measure shit, just do it by feel,

    First up is a rich autumnal stew, this one leaves ya feeling Irie!
    *Master Forester mushrooms.

    you need:-
    About a kilo of mixed mushrooms, all your faves.
    A large white onion.
    Butter.
    A bottle of red vino.
    A bag of dark muscavado sugar.
    A jar of french coarse grain mustard.
    A big bunch of coriander.
    Salt & plenty Black pepper.

    First--
    chop all the mushies into manageable pieces, chop the onion finely,
    Melty a big swadge of butter in a large heavy bottom pan (you know the orange ones Grauniad readers)
    Soften the onion well,
    add the mushrooms and stir until they soften and you can get them all in,

    meanwhile, with a huge glass of the wine (drink one at same time) mix up in a bowl, about third a bag of sugar, lots of ground pepper, the mustard, make a real smooth paste.

    when the shrooms are reduced enough, add the paste to the pan, stir well and simmer for about half an hour. Towards the end of the cooking add the fresh chopped coriander, save a bit of the coriander to garnish and serve with ya white rice, good bread or whatever you want.
