Spitting on your hand prior to shaking the hand of the buyer is an old gypsy horse-trading tradition and signifies that a deal is made. If either party back out, the deal has been witnessed and reputations are at stake!
As we are trading our steel horses (well the ones worth haggling over are steel anyway), in the modern equivalent of a public market, the ananogy is good i think.
