I actually have a 80mm quill stem too, will get them together and give it to you soon.
as for the brake, best thing you should do is to take it to Holdsworth and ask them to extend the hole on the back of your fork so you can insert recessed allen key brakes.
or fit a coaster brake, I fucking dare you.
