I'm loving my 56 GI at the moment. Feels fast enough on the flat, and I can get up most climbs without losing traction.
Depends a bit on crank length to be honest. I'm 165mm crank user ideally (often use 170mm because of availiability). But went up too 175mm for the single speed for climbing leverage. This makes it tricky to spin though, so I reckon I've lost some top-end speed.
