Really deep profiles can look a bit strange on a lugged steel frame (I know this as I've done it) but its your bike! However I wouldn't go for red tyres, especially with white rims. Red is a very strong colour and adding more would knock out the balance of the build (which is nice at the moment).

Black tyres FTW

I amn't sure at the moment alright, haven't decided. There's a very similar bike on velospace that was built up from just the frameset, with shallow chrome rims and black tyres. I definitely think deep section rims would look better, but I might stick with the silver alright...
