He probably has ceramic bearing in the BB, hub and pulleys, which would make some difference to the drag when pedalling backwards. The ratchet would be down to Zipp.
Very difficult to guage cadence, although he would probably have been hitting 120rpm+ on the 54/11 top gear on the fast downhill bits. He seems most comfortable on the flat at around 110.
