I'd go Moroccan. Vegetable tagine, with squash and chickpeas, apricots, tomatoes etc, with cous cous with toasted almonds and fresh herbs, is naturally vegan, as are shitloads of mezze - just leave out the yoghurty ones. You can also make your own flatbreads and dips. The Moro cookbook is pretty brilliant for that stuff.
