  • i can't recommend Veganomicon y Isa Chandra highly enough. The recipes are complex enough that they really stand out from typical vegan fare, but simple enough that they can be cooked by anyone. it's the closest thing vegan cooking has to a Professional Chef or Larousse Gastronomique. for a 3 course a typical vegan dinner would probably be a raw dish, a starchy/proteiny main, and a dessert... julienne vegetable salads are infinitely more tasty and impressive than "green" salads, main courses based on pasta/rice/cous cous are always satisfying, and dessert, well depends on your lady but chocolate cake or fruit pies are easy to do well vegan.
