Another idea - jump on the euro* to paris for a weekend (she'll love that), then hire a couple of the 'free' bikes - pootle about town (the traffic in Paris ain't that bad) admiring the lovely sights. Then surprise her with the fact you only got one way tickets.

So many of you are talking about this woman like she's ill informed.
She's dating a cyclist. She gets it. She doesn't want too.
Get her a bike as a gift instead of something she actually wants and you're a selfish asshole.
Get her a bike as an honest plea to get her to give it a try and at least it's honest.
Calling her the fairer sex, saying she's intimidated by a scary "racer", and asking how to "talk her into something" makes you extremely condescending, consciously or otherwise.If the fact that she doesn't ride is make or break for you, leave her alone.
If it's not, get over it.

Get her a bike as an honest plea to get her to give it a try and at least it's honest.This was part of my original point; if I buy her a bike will she see it as me trying to force her into riding, or would it be a welcome token of a desire to share one of my favourite things in life with someone I care about.
So far the only noises she had made against cycling are loosely based on safety, although now that someone has made a point about commuting in relation to female attire, I suspect that another strong issue may be not wanting to ruin the hour worth of meticulous preparation in her appearance before she leaves the house each day.

My grandfather was Polish. He used to call my grandmother something which phoenetically sounded like "starry schmok"... not sure if any of the Poles can help.
