I used to like deep vees, they just look cheap nowadays.

Are they now passé, or have the always been this way and it's just my taste has improved?

All 30mm deep rims have always been a cheap way to get a little aero benefit without the expense of carbon. Now that 40mm+ in aluminium is back on the menu, the 30mm rims look even worse, being simultaneously too deep to be classic but not deep enough to be properly modern.
