    My favourite kind of cookery is Keralan, primarily as channelled through RASA N16 (which is of course slightly adapted to Western tastes. There are some very good cookbooks by the owner, Das Sreedharan. 'Fresh flavours of India' (Conran) and 'The new tastes of India' (Headline) are the two you need. 'Fresh flavours' regrettably includes meat recipes (forced by the publisher), and only 'New tastes' is fully vegetarian. And, of course, the guy has since gone on to open lots of meat restaurants even though he is vegetarian, but the original vegetarian recipes are just great. Try Bagar Baingan, Thakkali Curry, or Rasa Vangi. I learned to cook through these books and I think the methods used are vastly superior to a lot of Western cooking.
