Or if you're after something more substantial the Market Diner is a Brighton Treasure, it's a little way off the beach but a nice quiet side road and is open 24/7. It's not exactly Michelin but it fills a hole.
For something classier (but still hardly Michelin), Buddies café-restaurant on the Kings Road (the bit above the beach) is similarly legendary and opens at similarly obliging hours.
Finally, what about having a bit of a meet up with Brighton based riders? Despite spending most evenings before work at Preston Park on my Fuji a few years ago I never saw any others but judging by this forum I know they exist! Maybe they'd like to get involved?
