the way it works is by creating a burr of metal by taking the knife away from the steel then re working the burr into the working edge by bringing the knife into the steel.
i can shave with my kitchen knives sharpening this way.
the magnet is to help hold the knife in place as far as i know. it on itself wont sharpen a knife
I used to think honing steels worked purely by burring, and perhaps the magnetism was to hold the metal dust or something.
But I recently bought a new honing steel and it was completely smooth, I thought it was a factory defect, but I tried it and it worked great. So I concluded it must be the magnetism aligning the sharpened edge.
