I've got some Porcini Mushrooms sitting waiting to be used, anyone got any ideas what to do with them apart from Risottos? I can't be bothered with a risotto and all the recipes online are a bit shit.

nursey: fry an onion in butter and olive oil until it's goopy, chuck in the porcinis and some garlic, fry until the porcinis give up their liquid and then it evaporates (i'm sure there's an official term for that), add some fresh thyme and pour on a bunch of white wine. cook until it mostly evaporates (it'll thicken up and make a sort of a gravy). serve on toast with parmesan on top. mmmmm...

Peanut butter and Nutella in a sandwich.
Peanut butter and marmite in a sandwich. (I hate marmite on its own as well).

you could make a roux sauce, stir fry the mushrooms and some finely chopped onion and parsley, add salt n pepper... add it to the roux sauce and you have a filling for bread baskets or a basic pie filling?

So, you toast your bread on one side, then butter and Marmite on the other, then back under the grill for a few minutes.
Due to the grilling of the Marmite, it ends up tasting like Twiglets, which 'raw' Marmite doesn't.
You ignored it here first.

two slices - toast one side, apply peanut butter to one slice [toasted side] marmite to other slice [toasted side]
bring both slices together to create heavenly fusion of PB and marmite
untoasted sides under the grill, done.
It's how I roll…
