Sheldon's setup is a bit different, he has a freewheel on one side and two fixed gears on the other, using a welded Sturmey Archer hub. No good for skidding at all. In fact, in the article he states that the drive train will bind if used in reverse. Not that skidding is actually reversing, but...
It does prove the 'two drive train' thing though. Like Jos' bike behind his stand at Rollapoluza.
But Jos' bike, as far as I could make out, simply had two identical fixed drivetrains, with one being redundant. In fact, I expect that one of the drivetrains on that bike would never be used - it would be pretty impossible to get an equal chain tension on both sides.
