  • You're going to find they're vastly different knives. I prefer a heavy knife but thin behind the edge. Knives from the sanjo region appeal to me. Most used to prefer lasers but now workhorse grinds are becoming more popular. I sometimes feel this is pushed by inexperienced western makers with only a few years in the game...

  • Can you explain it to me like you would to a simpleton with no idea about knives.

    What angle should I sharpen at? One came with a care guide that said 15 degrees. Would that be ok for both?
