@Tenderloin AliExpress roller review:
Very well made, solid construction. Abrasives seem good quality. I’ve used whetstones & a Lanskey type thing and this is the best of both worlds I think. Consistent angle while still giving enough feedback to concentrate or certain bits of the blade. Instant “setup” means it’s not a ballache to swap sides of the blade and slowly eliminate the burr.
Add a leather strop and you’re golden.
Even managed to do the wee knives with a bit of fiddling. The deep bladed nakiri needed the strop under the roller to raise it a little, with various chopping boards you could shim for any blade height.
Lots of cheap rolling sharpeners are shit but this one seems to be the sweet spot.

The pics in this post remind me of Airbnb listing where you've got to scroll through endless pictures of soap trays, pictures and plants to see the useful ones.

The text was ⭐⭐⭐⭐⭐ though.
I'm very tempted part of the reason I don't use my lanskey cloan that often is the set up...and because I haven't got round to flattening the worn stones.
I think soft stones tend to be the issue with the rip offs. Although you can obvs use real lanskey stones with the fake holder, which is what I was going to do when mine died.

After Christmas the family and I went away for a few days and my brother and his girlfriend house sat for us, so they could enjoy a few tourist days in London.
I get a call on the morning they are due to leave:
Brother: Uh, mashton, I left one of your knives out over night, wet, and now it has gone a bit rusty, that's not an issue is it? What should I clean it with?
Me: Which knife?
Him: It says "Blenheim" on it...
Me: FFFFFFFFFAAAAAAAAAACCCCCCCKKKKKKKKK

Was literally coming in here to see if I could find anyone reviewing an AE roller sharpener!
Had read reviews saying they were shit, but I got the feeling they were shilling for more expensive ones.

There seem to be loads of shit ones. I looked at a bunch of YT reviews and comparisons to see the flaws and that one ^ seems to fix all the things that they complain about. Even the cheaper legit Horl has a stainless steel plate on it to “strop” with. I’m no sharpening expert but that seems like at best a waste of time.

Burn him.

Never used one, but I’ve seen rust eraser type things in fancy knife shops

I've got one and it works pretty well!

I have a Niwaki one, they do a good job.
Also, luckily I live a five minute ride from Blenheim who do lifetime sharpening and blade care.
So not really a problem. Just annoying and adds to the calculus of "why are all other human beings not obsessive about the same things as me and are therefore total disappointments....?"

Lifetime sharpening! That's good

I have a Naniwa rust eraser but barkeepers friend works better.

My favourite knife is older than I am, handed down from my mum. It's not remotely rust proof and gets hidden at the back of the drawer, beyond the more modern, less rust prone knives when we have house/cat sitters.
The stakes are lower though, it's definitely not in the same league as a Blenheim Forge knife!

Ordered an AE sharpener, then decided on these:
https://www.kinknives.com/product/aogami-super-santoku-170mm/
https://www.kinknives.com/product/sus440c-nakiri-165mm-turquoise-handle/I was going to order both the Aogami Super Santoku and Nakiri but the Nakiri has sold out, so opted for the green handled stainless laminated one above instead. I’m sure people will be along to tell me I’ve chosen terribly, but they seemed like a reasonable choice.

Both look rad. You might be all over this already, but the santoku could be single bevel - I'd want to check
-
• #6695
What issue would single bevel cause, is it just a pain to sharpen?
-
• #6696
Negative:Edges are delicate, it won't cut straight without steering. They're slicing knives not chopping.
Pro: Very thin cuts once mastered, food release.
I want to try a single bevel usuba but I enjoy sharpening and learning new things. You will need stones to sharpen a single bevel as the back side is flat (hollow actually) and you don't put a secondary bevel on them.

• #6697
Also a problem if you are left handed.
You can get left handed single bevel knives of course, but I don't think many Japanese knife makers bother unless custom ordered. -
• #6698
Yes! Being right handed its not something on my radar!

The horror...

Both double bevel confirmed.
