I pack a Lansky blade medic when I go on holiday.
@youClown depends on the use case, but the Tojiro I think is a stainless VG10 steel, and for veg/fruit slicing with a push cut technique (which is pretty kind on blade edges), Nakiris can stay sharp for ages with very minor maintenance.
