  • If you are in north or west London Hoohing or Loon Fung and get a Hancock London wok ;)

    https://www.hoohing.shop/-hancock-13-inch-flat-btm-wok-fbw13-c2x36725552

Also there is a whole wok thread.

  • Ha, so there is - at the third time of food ending up on the floor I'll reconsider my choice

  • That was what I had in mind - but hopefully I can wing it

  • Be fine, just balance the wok on the hob. At a guess you are using gas.

Flat bottom woks (carbon steel) work on induction

  • Does that require you to remove the pan holders?

  • You just need to burn the fuck out of it now

  • Never thought of that, just sit it on the pan holders.

  • No, you need to seal the wok to become non stick

  • I’ve got a fiddle bow knife, similar to this…..wafer thin bread if required!

  • Opinions please....can excessive stropping mess up the profile?

Long story. I chipped my Rockstead Sai Tanto https://www.rockstead.jp/collection/spec_list.html . Three small chips. It's 67 hardness and a convex grind but I tried to remove the chips just with stropping. The instructions say you should strop the knife 2 or 3 times every time you use it. I've stropped it more like 200 or 300 times, which has nearly removed the chips. But the sharpness isn't great. Stropping being an imprecise manual process, I'm wondering whether I might have messed up the profile? Maybe I've invalidated the warranty with 'improper sharpening'? The warranty says "Rockstead warrants the sharpness of the blade. If your knife doesn't cut well, please send it to our company. Rockstead warranty doesn't cover damage caused by abuse, misuse, loss, improper handling, alterations, accident, neglect, disassembly, or improper sharpening." Eek. Have I fucked up my £1600 knife?

I have a Wicked Edge kit, so I probably should have started with that so I could get the angle just right. But with the convex grind I'd probably get it wrong, according to this https://www.knivesandtools.co.uk/en/ct/how-to-convex-sharpening.htm Should I quit now and send it to Rockstead? If I don't invalidate the warranty I get free sharpening for the life of the knife. But I pay the postage to and from Japan, which is £50.

There's a puzzling myth about Rockstead knives. It says you never have to sharpen them. Ever. Just the 2 or 3 strops mentioned above. I suspect this is just a dodgy translation from Japanese.

I did the stropping in the approved Rockstead manner, with a polish-soaked piece of denim pinned to a board. https://www.rockstead.jp/maintenance/

  • Picked up a SOG PowerPint from alix for £26. The idea is to pair it with some common bits in a holder and keep it in the car as its real party trick is taking bits in its jaws.

Which let's be honest is very useful.

Got to say I'm really impressed. I haven't used the Gerber mini multi tools but this feels great. The piliars are absolutely on par with Leatherman, if not better. The 3 cons (potentially):

    1. All the tools lock (I can see this getting old quickly if you pull another tool that unlocks it, so you don't need to use the release spring on the inside)
    2. The removable clip doesn't feel comfortable in-hand
    3. The jaws stay open when open so you can't extend the tool like you can with Leathermans.
    4. All quite stiff.
    5. Lacks that really nice hand-feel sak and leathermans seem to have mastered.

Overall though, if you wanted a small multi tool for say travelling or touring then I'd throughly recommend this. And in case you're wondering, no the scissors aren't anywhere near Victorianox's. But then what are.

  • Stupid question is the SOG real?

  • Not a stupid question. Honestly I don't know.

It seems like good quality and there is nothing obvious to give away that it's a fake.

  • Misspelled jewelry on the packaging?

  • Less than half the RRP?

  • When I image searched this came up
    https://mygoodknife.com/en/shop/multi-tool-sog-powerpint-bead-blast-pp1001cp/

SOG have a bit of an Internet rep for poor QC, so it's not impossible.

I'm not sure price alone is an indicator as US pricing is cheaper.

For me the big things are:

    • size
    • bit holder
    • pillars
    • glasses screwdriver

Imo the Juice is a great size, although mine is the chunky one with all the tools so the weight takes it to the point that you have to ask the question "why not a full sized one" (the answer is mine was gifted then twice warranty replaced by Leatherman). The SOG PowerPint is that sort of size, but a bit smaller.

I definitely would not pay £50 for it though. The tools are simply not good enough.

Victorinox Swiss Tool Spirit XC Plus would be the ideal for the car/motorbike I guess. But that's quite pricey, so this plus the right ¼" bits seems like a reasonable compromise.

  • Well a pack of 3 victorinox paring knives (standard, serrated, tomato knife) is £8.49 on Amazon.
Would be rude not to get another set...

    linky

  • Only problem is you can only use them for raw meat ;)

  • Red for tomatoes in my world!
Maybe I should get a set of hygiplas colour coded boards.

  • Just in case youre serious about these - They warp quite badly after a while (unless you buy the bonkers thick ones), and they shed plastic into your food.

  • We have these (well they're slightly different and were a wedding gift).
However we don't eat meat, so don't pay as much attention to cross contamination.

  • I don't need to pass hygeine ratings, so fortunately I don't need these.

I have a 60x40 end grain chopping board, and when I have particularly staining, smelly or contaminating foods, I usually put a flexible cutting mat on top, that then goes straight in the dish washer.

I also have 2 Hasegawa boards that I don't use so much at the moment because they are a little to large to easily wash up in my sink.

  • Highlighting 'twice warranty replaced' - Leatherman have the best warranty replacement policy I have ever come across. Bought something on eBay slightly nicked in the blade, posted it in with my return address on a slip of paper, got a new one back no questions asked.
