GRX is considered ‘road’, and therefor won’t work with MTB.
The only real limitation is that the derailleurs you use have to be either road/gravel or mountain bike derailleurs – you cannot mix these derailleurs.

Oh, I didn't know there was a clutched Ultegra RD. I was thinking about sticking a GRX RD on the Mason but perhaps a clutched Ultegra RD would be better. I wonder if it can also cope with my 42T MTB cassettes...

If you mean the Ultegra RX derailleur. I use the mechanical version with a 11-42 SLX cassette all the time

Could be. I know they had non-standard rings to get a smaller inner ring.
Another, more spendy, option is to get Power2Max gravel powermeter cranks. They're 46/30. I've got them here from the Tripster going onto the Crux.

Although, most of my bikes are more GRX than Ultegra now so maybe I should just stick with GRX for interchangeability.

I had one of the Ultegra RX and swapped it out for a GRX 810, for the most part I think they are identical. I ran it with a 11-40T with some adjustment, and I’ve just got the GRX working 2x on a 11-42T. I’d imagine if you’re doing 1x on the Mason the Ultegra should cope fine
To answer your previous question, I’m using a CX70? (2x10 CX top pull derailleur) and it can shift into both rings on the GRX crankset fine, I guess with the Di2 you have less adjustability?
Edit: also re crank ideas, the Easton EA90 and they do a 48/30 or 46/30 gravel ring I think

No, 1x is for MTBs only. My Mason Resolution is a road bike. It's 46/34 x 11-42 with Ultegra RD on a Wolftooth (not strictly necessary but I wanted to test it).
I think the DA Di2 FD doesn't have enough adjustment to move out the extra 2-3mm needed for the GRX crank's chainrings. I'll probably just get a GRX FD from Dolan unless anyone spots a cheaper/used one.

A heady mixture of dream gravel and ploughed field type surfaces in Fuertaventura... an xc MTB would have been more appropriate for about 30% of this route...

Very cool. What advantage does the Lefty fork actually offer? My dad had one on a Raven when I was a teenager and I thought it was the coolest thing ever. The only time I saw him cry was when that bike got nicked.

Since they're upside down forks (fork?), less unsprung weight. Also less 'stiction' because of the roller bearings. And they're very stiff.

I can probably get anything. Budget is a concern.
My alu framed commute to pub and station bike is wearing through at various points and the mounting bosses are all lose or cross threaded. Plus I want something different.Fallback option is a sonder camino frame set.
She's got a GRX RD - does MTB also not work with GRX?
I love Shimano but fuck their fake limitations.
