These were the things I wanted to hear. Nice ideas - leaning towards simple seared for the first try.
I had recently, very tasty. Texture is more like a slow cooked joint than a steak though as it pulls apart quite easily. Don't go too hard on the searing, is less forgiving than the real stuff.
