I assume it's more the lack of rigidity.
We used to have 2 pairing knives, one super cheap with quite a flexible blad, the other stiffer with more of a spine.
Unfortunately the stiffer ones handle feel apart. But I liked having both depending on what I was doing. You could argue that the stiffer one was closer to a utility knife I guess.

Why do you need a thicker blade on a paring knife? It’s literally for delicate little jobs like peeling garlic.
