    The Opinel looks very similar to the Victorinox with the thin blade so think I'll pass on that and Wusthof looks pretty out of budget.

    I seem to remember there's a Nisbets in Soho so may have a look in there (for something admittedly cheaper than the linked one).

    Why do you need a thicker blade on a paring knife? It’s literally for delicate little jobs like peeling garlic.

  • I assume it's more the lack of rigidity.

    We used to have 2 pairing knives, one super cheap with quite a flexible blad, the other stiffer with more of a spine.

    Unfortunately the stiffer ones handle feel apart. But I liked having both depending on what I was doing. You could argue that the stiffer one was closer to a utility knife I guess.

    Wut? Put garlic on the chopping board and lightly bash it, cut off the root end and skin releases.

    Never had to peel garlic.
