Maybe have a look at Mercer knives, they use the Western style steel and shape but are made in Taiwan

The opinel I have is not a thin blade like the victorinox (we actually have one of each), but actually going to look in person is prob a good shout anyway.

Victorinox Fibrox 4 eva.
Why do you need a thicker blade on a paring knife? It’s literally for delicate little jobs like peeling garlic.

The Opinel looks very similar to the Victorinox with the thin blade so think I'll pass on that and Wusthof looks pretty out of budget.
I seem to remember there's a Nisbets in Soho so may have a look in there (for something admittedly cheaper than the linked one).
