I've been visiting France for many years now, and honestly it seems like just in the last 18 months they've started to get a lot more vegan friendly. Végétalien is the word for vegan, but a lot of products and meals were just labelled "vegan" when I was last there in May.
I'm afraid I don't have specific recommendations for Paris, but just thought I'd share the above.
