I used to always be able to get by in France by saying (in French), 'Oh, this menu all looks so lovely, but the doctor won't let me eat any meat or dairy due to this colon condition'. They'd be overwhelmed with sympathy and you's always end up with something half-decent. Certainly a lot better than going in saying, 'I'm ideologically opposed to your way of life, now cater to my demands'.
Don't know how successful it would be now - they're probably wise to sneaky vegans by now...
