  • Got an outdoor wok burner. It bangs.

    First recipe from Kenji also slaps. Just need to weld a handle onto the big 45cm wok and we’re in business.

    How much heat does it throw out?

  • 65,000 BTU or 20kW

    Not the most powerful but Kenji rated it in his shoot-out. Quite scary at max tbh

  • Coincidence. I did a cracker of an aubergine and tofu stir fry tonight and had the wok out for the first time in ages. Perfect season from last time, nothing stuck and wiped clean afterwards.

    What’s everyone’s recommendation for a good stir-frying rice?

  • Puts my 6kw hob wok burner to shame…

  • Yeah paella would be good. Also opens up deep frying and even smoking (wood chips in a screaming hot wok, mesh above and lid on). Think I’ll have to build a garden kitchen at this rate.

  • I think it’s a recommendation for a good medium grain rice I’m looking for. I haven’t seen it in the supermarkets - they basically only have basmati, quick-cook or low quality jasmine. I need to hit the Chinese supermarket instead.

    Also is the drillium handle from your hill climb bike?

  • Eurobox lid for a prep tray, can’t wait to have an outdoor worktop next year.

    Handle is a stainless exhaust baffle actually! A bit of drillium wouldn’t go amiss tbh, it’s pretty hard work getting the flick, wok weighs 2.4kg with nothing in it.

  • I have a Craft wok which is similarly heavy, which is a challenge when at typical kitchen worktop height, especially as wok burners tend to be set quite a bit higher.
