I only ride offroad and mostly North/North-East of London, so feel free to grab any routes from my RWGPS, most of them from the past 3y should be offroad focused - generally 50% or less tarmac, a few have already been linked above (the Big Summer Gravel one @exteroceptive shares some bits with the Sacombe gravel @hippy shared)

EDIT: The Big Summer Gravel is absolutely ace at this time of the year

Not sure where you mentioned a ride down to Brighton, but I'd be well keen on that off road route for partner and I. She's not keen riding on road and I'm collating routes that aren't mental for off road use.

I rode gravel bike to Brighton last week. Route here. Care: the 'chute to the A25' section is proper MTB territory although I managed it slowly on the gravel bike
