Could you try some coconut cream? I've never made ice cream but that's what springs to mind!

Yeah, I did wonder that. Maybe the next batch will be a coconut ice cream to see if the texture is there. For the first one I just wanted vanilla and thought coconut cream would add too much flavour (although undoubtably delicious!)
