Yes and lets chat about that. Currently thinking a 32T cassette up front. Which cog do we want on the back?
I am not sure if 12/20/28T is doable and how that will feel at 16"....
https://www.bikecalc.com/gear_speed shows brompton wheels size 16" (Bead-Seat Diameter 349mm) and not 16" (BSD 305) as the wheels we have. BUT, BSD 349 with 33mm tyres is the same as 305 with 55mm tyres.

I was thinking aim for a usable middle gear end have to other two be designated go fast/climbing gear respectively - but Odense is much flatter than your neck of the woods.

I just want to give a shout out to my personal favourite gear calculator. It's interactive! You can drag the cogs around! But there's a huge gap between 20 and 12 teeth on the back.

Our eldest (5 in april) spins out rather quickly on her Woom 3 on flat sections.
No issues on climbs, but due to spinning out so fast, she does get tired on long distances.I have no idea what gearing it has, but I do kick myself not looking in to this before we got the bike.

Nice project - I really like how you give frames a new lease on life!
Erik Nohlin, one of the spiritual fathers of the Awols is moving semi -close to you and starting a B&B, if you want somewhere to ride once finished.
He's most likely a good person to talk bikes/design with, if you're into that by some chance. -

Thanks. I am a bit unsure about the saddle. I might fancy a black flite.
Other things that keeps me up at night is deanodising and polishing the rear mech and giving it the drillium treatment to please the VMB gods. Also the Thomson seat clamp needs to go silver.
But that's post Kolektif if ever. Sort of enjoy the the posh but ratty parts bin look

I mean if you are referring to the frames and design being a bit shit, then I get it. There's a reason both frames have issues with their chainstays.
Mine is made from 725 and look to have nice welds and decent cable routing. I will be remaking the rear ends to take larger tyres and build new forks for it most likely. The only thing recognizable will be the head tubes. And I sort of don't mind them on a monster cross tourer type build. My inspiration for this build will be that famous white Mikkelsen from the Radavist -

Very excited to see what you come up with and glad you agreed to take on mine as well! @Chaley are you referring to the high rates of failure on the AWOLs? After I discovered the chainstay of mine had a crack I browsed a Facebook group on AWOLS and was surprised to see so many stories of near identical problems. Regardless, I’ve had a lot of great times on this bike including >10k km of touring and I’m hoping to keep it for many years to come.

It is my "professional" opinion that the chainstays are overcrimped. Same on Standert Pfadfinders and that sort of big tyre on 68mm BB kind of frames.
Both bikes will be great with yokes and new forks

What rear tyre clearance will you get with the yoke?
I’m day dreaming of getting my Straggler modified to fit 2.2” (while still being able to run a double chainset. Would like to go even bigger but I think the fork clearance is too tight.
