You could probably go with 6 or 9mm skin ply if you built the desktop as a torsion box.
My concern would be the strength of those hinge/runners and the mounting screws.
Maybe look at fold down legs to support the front edge of the desk?

Question for the hobbyist/pro carpenter types;
I'm trying to design a bereau type wall mounted desk unit desk itself will be no deeper than 600mm and sorted by the things pictured below.
My question is about sag, and how to avoid it. I'm guessing 1 skin of 18mm ply will be bendy so considering making the desk a shallow box section with a small recess to stash keyboard etc. Either that or just double up the ply, possibly with some kind of metal reinforcement sandwiched in between.
Any tricks I'm missing?
