  • I just use a massive pan full of water. Precarious but free.

  • Speaking of tofu, Lidl have some firm tofu in on offer for veganuary. They also have tempeh but my local keeps selling out.

  • I've got one of those. Helps with stuff like Cauldron, as others have said, as that's a fairly 'wet' tofu. Doesn't do a whole lot with dryer stuff like Tofoo, though.

  • I'm sure a bottle of this appeared here over Xmas, no-one has been well enough to try it though. I will investigate.

  • I had a bacn butty this morning with some "THIS" streaky rashers, actually really good if you like that kind of thing.

  • It's less precarious if you cut the block in to thinner slices before pressing.
    This probably isn't a revelation to anyone else but I recently discovered the joys of tearing tofu in to chunks rather than cutting it. The ragged edges give more surface area for crispiness/ sauce retention.

  • Another good method for the cauldron/moist/less firm tofus is to cut into chunks/slabs and put in a pan of heavily salted boiled water. I know it sounds kind of counter intuitive to put it in water but the brine draws a lot of water out and firms it up. No need to keep the water boiling, just turn the heat off and leave the lid on. And it also makes it nice and salty.

  • This recipe is absolutely banging. It's about 10 minutes worth of prep but an hours cooking time so probably not one for a weeknight meal.
    It's described as a ragu but to my uncultured palate it just tastes like a really good bolognese type thing.

  • Any suggestions somewhere in south/south east london for a Sunday roast? Preferably with vegan and non vegan options and dog friendly.
    Anywhere but the Alma in Crystal Palace (I'm allergic to the seeds in their very seed filled vegan haggis, which is the Sunday lunch option).

  • White horse (peckham) menu looked pretty banging when I was in there! Haven’t tried it tho :).

  • Found these big bottles that look good for brewing something or other! Anyone make their own kombucha..?

  • Lol, maybe I’ll install a 1 way valve to stop the pressure building up…

  • I’d only use plastic bottles for anything fermenty. Forgot to burp my elderflower wine in a glass bottle once. It was horrific, glass embedded in the wall, stickiness everywhere. Plastic at least expands a bit and there’s a chance it will fail gently.

  • I was thinking of using one of those 1 way water valves

  • I've done some really fast fermenting turbo cider in glass demijohns, just had some cloth over the top when it was violently going for it and those airlocks for the rest of the time, wouldn't risk doing it sealed though.

  • Plant-based food is often dreary and dry

    What a load of BS, from a pro restaurant critic. As if meat and dairy are the only way to inject excitement and moisture into food.

    Restaurant sounds nice though.

  • That looks banging!
    Whilst I'm here, any suggestions for somewhere nice nearish the Tate modern? Needs vegan and non vegan options, preferably not junk foody.
