in-laws a bringing a Jamie O one with sausage meat, chestnuts and peaches so not that one but i do have 1kg of sausage meat to use.

I cooked the first of two hams yesterday. Didn't do a porchetta though I couldn't tell you why.
Had ordered two smallish 2kg ones but was then informed we would be bringing one of them to the in-laws on Christmas Eve so called up Philip Warren (local humble brag) and they swapped with 2 x 4kg and I feel a lot better about life. House smells porky. Planning on making beans with the liquor.

Ours doesn't sound very different to the JO one, though doesn't include the sweetness of peaches.
Grate carrots and onions to a fairly fine texture, salt and drain some of the liquid from them. Crumble in cooked chestnuts, sausage meat, breadcrumbs, egg, handfuls of parsley, tons of salt and pepper. Banging every year. In fact, need to do that this eve along with bread sauce.

It was just a last leg of lamb cooked in red wine and beef stock (plus the usual aromatics). I took the meat out when it was done after a bout 4 hours, strained and reduced the stock, pulled the meat off the bone and recombined. Left it over night and reheated the next day.

Cooked our porchetta this evening, turned out decent. I don’t think you overpaid, ours was £40 for 2.5kg and the butcher prepped it.

Definitely a premium price but hopefully if I cook it as well as last year it's going to taste fucking brilliant
