You'll struggle to get a GPS lock indoors as the signal strength isn't strong enough to work through walls/roofs. Always try and get a lock outside.
Most GPS watches also have a manifest file regularly updated, which gives them the approximate position of GPS satellites, so they can get a fix quicker. So make sure you're syncing it with your phone regularly.

What I do is I use Strava with the Apple Watch and iPhone, and those do sync obviously - not sure about how to sync "manifest files" though.
It should just do it automagically without any input. Think it’s called A-GPS. On Polar/Garmin it tells you when the expiration is (usually a month) but they get updated every Sunday.
