BDHU is much more comfy in the hoods, no question, but then I find it harder to reach the levers in the hoods.

There are levers/shifters out there that are adjustable. What are you riding?

Hi. If you mount you bars like this drawing and move levers up so front of levere is vertical and ortogonal to the horisontal line you will be in a better situation with better reach.
Red line should be on the green line.

the water bottle ruins the bike?
You are within acceptable angles for sure. Red line is where I feel you are and green is where I sense the horisontal line is. I'd aim to make the bottom part of the bars horisontal and then move the hoods up to where they are currently sitting in "space". It is easier to judge if we can actually see a horisontal line tho
