Thanks for the input all. Sounds like I’d need a new RD, but potentially could get away with that plus GRX shifters being the only new components (keeping the Deore callipers).
If I used a 2x left STI in a 1x setup would that be weird with the shifting not attached to anything? Would the levers just be flapping about sideways?

I have 8020 on the left as a brake only and nothing flaps around . Useful on boring roads to pretend your going to big ring it.

How poignant is the ‘too much grease = skiddish balls’ thing?
I re-packed a set of ancient Chris King ISO hubs recently, and filled the bearings to the brim with grease. Will I be dieded?

How’s the build coming?
Just need to cut and connect the hoses, add fluid and bleed in terms of "complicated" bits. Need to swap a crankset off my gravel bike, then index the gears and add bar tape then I'm done but that's an hour one evening I reckon.

Committed to service this bottom bracket. Any advice on regards the bearings? Where to buy, model, price, etc..
It says 6002RS, but loads of options out there.

UN300, I've seen a bunch of tange fail and we've replaced them on the cheap, although could've been a bad batch.

No, but shimano BBs are JIS. I'm happy to fix up most things, but cartridge BBs you may as well just get a new shimano one in that'll do the job for years, the fixed cups aren't really designed to be removed or refitted and you're not gaining anything from saving the sugino and might end up fucking it up and need a new one anyway.

Yes!
I bought a very neglected bike and I´m servicing every single bit of it, just to learn and also to not waste. I know that probably the time I´m putting into it it´s ten times the cost of replacing it but I love repairing.
I think I´m actually going to try and clean and regrease the bearings, I´ll get a new set if I can´t and will replace it as the last option.

Several square taper BBs with user friendly replaceable cartridge bearings out there.
T.A., White industries, probably more.
Pretty sure @snottyotter said he'd got GRX hydros working with Shimano MTB brake calipers.
