Sounds like you're describing a Contend / Domane
Don’t really recommend fitting biggest tyres you can even bike is optimised for says 32mm.
It’s better off going for a gravel bike that’s more toward endurance geometry that will handle great with skinnier tyres and equally as good with larger tyres.
Checkpoint, Crux, Revolt to name but a few.
