What do I need to buy so that I can connect this guy to a SON hub and a SON rear light. I don't want to wire it to any kind of charger. I'm staring at the SJS website like ??? most of it is out of stock too.

Don't cut those wires any shorter than they already are! You'll need some lengths of cable to join to those, ideally some heatshrink to cover the join, and as mentioned the relevant connectors depending on what output your hub has (standard spade connectors or possibly a push-in connector)
