Can you simply buy brake hose off a roll from a bike shop and get olives and barbs loose, like cables and ferrules? Or do they push you to buy packaged kits?

BH90 from a reel is fine but you might want to call ahead to see if your shop of choice has some as it's not always kept and 4 loose olives and silver barbs to go with, which they should have but stock has been a bit up and down of late.

My 2020 Kona Unit has barely any gap between seat tube and tyre, even with the dropouts slid right back, so I can't fit a derailleur in there as the mechanism fouls. It also has no cable stops for an FD. Are there any band-on top pull derailleurs where the mechanism is out to the side/front. Built-in cable stop would be appreciated, but I know you can get these so it's not an absolute requirement.

Can this split hood be fixed? Sewing it? Metal clips? Or is it done?

Better-qualified people will probably correct me. But I have tried to glue, cable tie/wire & wrap and tape hoods in the past with no luck (maybe due to my own hamfistedness). I'd say it's done.

Looks fine but you're running outer the whole way? Might be fine but might be heavy to shift.

I've found it fine to shift. Ran it like this before, but couldn't recall how much of a "bigger than normal" loop is required for sram mechs.
I find good cable prep (cutting/filing outer ends square, lube on inner) helps a lot for shift performance with full lengths of outer.
go for the larger size and use an inverse shim if it doesnt fit?
