Found this in a supermarket and thought why not opinel no8 le Savoyard. Difference between this and a normal opinel is the handle shape and that the wood is varnished.
Perfect for everyday carrying in France.

The guy that runs alldayknives, making the handles from recycled plastic, is running a kickstarter.

thinking of treating the handles as others have done - i have a load of double-boiled linseed oil (intended for the bricks on the front of my house), so might try that.

It's good for the price, and fitted the criteria of what I was looking for but it would be expensive at full price (I'm not sure if it ever sells at that).For those who do like ProCook stuff (and at the discounted prices it does seem to be decent stuff) there is a shop on Tottenham Court Road.

My neanderthal kitchen skills and eating habits don't warrant spending a lot and/or getting a wide variety/whole set - so something that looks nice, isn't crap, and is cheap ticks all the boxes.
Also the wooden handles quite nicely match the Opinel bread knife we got recently :)
For reference, the last 12 years or so in the kitchen I've only used a single Victorinox Fibrox I got at TKMaxx which has generally done fine (confession: until I snapped the tip off using it as a screwdriver)

Mainly.
For the avoidance of any doubt it is not a £50 knife. But it's definitely better than your usual cheap knife and excellent vfm.
I'm not gonna lie and say the price wasn't a major motivation in my purchase, but mainly I don't have a Nakiri and haven't used one before. So it was a bit of a PoC for me.
I haven't seen the Professional knifes, but I did get a steel from the Professional X50 range and it is very well finished.

I'm looking for a new folding knife and wondered if any of you ladies and chaps had any suggestions for possible options.
Use: Main use is for climbing emergencies. Cutting rope etc. Will spend a lot of time attached to a climbing harness in very wet conditions.
Requirements: Sharp. Weather proof (no wooden handle). Locking. No serrated blade.
I currently have one of these Gerbers. It has been a very suitable design over the years but the steel is really bad at holding an edge and is coming to end of life (have sharpened a lot of metal away). It was only £25 new I think.
I like these Victorinox but they are very spendy for what they are.
Any suggestions for other brands and models I could consider?

Can't recommend a model, but I'd probably be looking at Spyderco and use Micarta grips/scales, or check etsy for aftermarket ones. Because they are fibre based they should have better grip in the wet. The Salt range has some sort of magic anti-rust steel.
