Needless to say, if you're using 7800 on a CR1 then you're already building a very light bike without needing to go full WW. And it'll feel amazing to ride.
Much will depend on wheels of course. Those Ksyrium SL S.P. wheels are apparently 1500g. Not too bad tbh!
Maybe just consider the affordable WW hacks, if any?
CNC brakes (~£70 on eBay) like Planet X or Fourier's, are 205g a pair. 7800 brakes are 315g
Lightweight butyl or latex tubes are <70g each. Normal tubes are 100g ish.
A carbon saddle (i.e. Romin) might save you 100g+.
Most bar tapes are near 100g, Deda tape is 40g.
That's ~350g saved without buying anything too fancy. Might turn a 7.3kg build into 6.9kg.
Either way it's gonna be pretty zippy.
